The perfect lamb chops and the benefits of lamb meat

Minted lamb chops are one of my top treats, and the secret is not to overcook them. Lamb tastes great when is cooked well and there are plenty of benefits if lamb meet is added in the diet. The meat is naturally rich in protein, vitamins and minerals, helping muscle growth, muscle mass, growth and development of children's bones. The vitamins from lamb meat will  support good health, well-being, mental functions and will reduce tiredness.

Nutrition facts. Lamb is mainly composed of protein but also contains varying amounts of good fats, 100 gram serving of lamb providing the following nutrients: 258 calories, 25 grams of protein and 16 grams of fats. Lamb meat contains no carbs, sugar or fibers.

Lamb meat is primarily composed of protein, usually 25% of the lean cooked portion. It provides all nine essential amino acids required by the body, also promoting optimal nutrition whenever muscle tissue needs to be built up or repaired. The fat content is usually around 17–21%, mainly saturated and monounsaturated fats. Lamb is a rich source of many vitamins and minerals, including Vitamin B12, Selenium, Zinc, Niacin, Phosphorus and Iron.

The above portion of lamb meat will provide:

  • 41% of the RDA for Vitamin B12, essential for healthy nervous and digestive system.

  • 49% of the RDA for Selenium, the antioxidant micro-nutrient that is vital for healthy cell division and cancer protection, thyroid health and detoxification.

  • 39% of the RDA for Vitamin B3, essential for the nervous system and creation of  hormones.

  • 31% of the RDA for Zinc, helping the immune function.

  • 23% of the RDA for Phosphorous, needed for healthy bones and teeth.

  • 15% of the RDA for Iron, necessary to make hemoglobin and myoglobin, the proteins in red blood cells and muscles that help transport and store oxygen.

🍋Lemon and mint lamb chops meat🍖 

I buy my lamb chops from the local butcher, not because I am against supermarket meat, but I like to see the meat, and choose small chops, about 4 inches tick. To spice them up I used fresh mint, one lemon, one chilli pepper, 2 large garlic cloves, crushed, coarse salt and mixed Italian herbs.

To enhance the flavours, I first squeezed lemon juice on the lamb chops, and rub them well. I always season them heavily, on both sides, because  most of the spices will be burn by the grill. I chopped the garlic, chilli and mint leaves and pressed them on the meat, grinding salt and sprinkling Italian herbs on top, than squeezed more lemon juice. I am lucky to have fresh mint and hot chillies in my garden so I use them abundantly in dishes. Use half of chilli or no chilli at all if you don't want a bit of heat in the food. I let them marinate for 1 hours, in the fridge. Take them out 20 minutes before cooking and let them settle at the room temperature.

I cooked the chops on the electric grill but the cooking process is the same for grill pan. Heat the pan until almost smoking, than for a medium-rare chops let them sear for 2 minutes. Flip them over and cook for another 2 minutes. For rare keep them 1 minute or 3 minutes for well done lamb chops. Let them rest for 1 minute, add salt and pepper and enjoy.I usually have them with salad and basmati rice but feel free to be creative.
