1- In Making Brown and Grain Bread
Rye is a gluten-containing grain like wheat, which means it's a vegetable protein. The nutrient required for the dough to reach its consistency in bread making is gluten, which is found in rye and wheat. Gluten in flour makes the dough rise, while it also causes it to be light and soft.
Rye flour is used in making healthy brown breads to make the dough rise. It can be used with rye flour, wheat, bran, etc. flour mixtures, or it can be used alone to make bread.
2- In Pastries
Rye flour is used for the preparation of leavened and unleavened doughs other than bread making. It can be used by mixing rye and wheat flour in many products such as pastries, cakes, pies, quiches, cookies, pancakes, tarts, etc. and obtained with dough. Rye flour is used for salty doughs rather than sugary doughs.
3- In Soups and Salads
Rye can be used instead of wheat flour in dressings and sauces prepared for the consistency of soups. Apart from sauces and seasonings, ground rye grains can also be added to the soup.
