Ice cream cake with blueberries

Hello everyone in today's story I will share with you this wonderful and delicious recipe I hope you like it thanks for reading.

INGREDIENTS

1 cup mascarpone cheese

3/4 cup powdered sugar

2 tablespoons grated lemon peel

2 tablespoons lemon juice

2 1/2 cups milera

speculaas biscuit with cinnamon

1/3 cup blueberries

INGREDIENTS FOR SOS:

2 cups fresh or frozen blueberries

1/2 cup water

1 teaspoon lemon peel

3/4 cup orange juice

1/3 cup lemon juice

3/4 cup sugar

3 tablespoons density

1 vanilla sugar

a pinch of cinnamon

PREPARATION:

Make a blueberry sauce.

In a deep bowl, pour blueberries, half the amount of water, orange juice and lemon.

Add grated lemon zest, sugar and vanilla sugar.

Stir slowly over low heat until the blueberry sauce boils.

Stir the density in the remaining water.

Add the thick blueberries, stirring constantly, for about 5 minutes.

When the sauce starts to thicken, remove from the heat, add the cinnamon, stir and set aside to cool.

Make a cake.

Whisk the mascarpone cheese with the powdered sugar until foamy.

With constant whipping, add powdered sugar, lemon juice and lemon zest.

Slowly, with a whisk, add the mileram.

When the ingredients are combined, separate 1/3 of the finished cream and cool it in the refrigerator in a closed container.

Coat a deeper rectangular bread pan with plastic wrap so that the foil covers the bottom and sides of the pan.

Arrange a layer of speculaas biscuits next to each other over the foil.

Spread a layer of cream cheese over the biscuits, and add a layer of blueberry sauce over the cream.

Spread a layer of cream cheese over the blueberries again and repeat, biscuit-cream-blueberry-cream, so that you finish with a layer of biscuits on top.

Leave the cake in the freezer overnight.

Turn the bowl with the frozen cake upside down, slowly remove the cake from the bowl on a tray or plate and remove the foil from the cake.

Coat the cake with the remaining cream cheese and return it to the freezer for another 15 minutes.

Mix the blueberries with the remaining blueberry sauce and decorate the top of the cake with a layer of sauce.

Cut the cake into thin slices and serve.
