Pork Adobo with Pineapple
Adobo is a very popular Filipino dish which involves marinating of fish, pork, chicken, beef, vegetables in soy sauce, vinegar, garlic and peppercorn. It has a contrasting taste of being salty, sour, and a little sweetness. It is a dish always present when we go outing with friends and family. Adobo dish can be dry or with sauce. Either way, i love it. The recipe I am writing today has a little sauce. I like my adobos sweet so I use pineapple whenever I cook it.
In a bowl, mix 1/3 cup of soy sauce, 1/4 cup of vinegar, 4-6 cloves of minced garlic, 1 tsp whole peppercorn. Pour it on 1 kilo of pork in adobo cuts (cubed) and let it marinate for 30mins to 45 mins. Turn on the heat (medium heat) and cook the pork. Let it boil for 6 mins. Pour 1/2 cup of pineapple juice and continue to boil for 1 minute. Lower the heat, and let it simmer for 20mins. Pour 1/2 cup of pineapple tidbits and continue to simmer for 5mins more.
Voila! Your pork adobo with pineapple is ready to serve. Enjoy eating!
