How to Make Chicken with Prunes
Ingredients for 4 portions :
• 2 tbsp olive oil
• 800g chicken breast fillets
• 450 ml chicken stock
• 3 tomatoes
• Salt
• Реpper
• 125 g prunes
• 1 tsp liquid honey
• 1 tbsp freshly grated ginger
• 50 g raisins (or currants)
• 1 pinch turmeric
• Saffron
• 150 ml water
• Sesame seeds, toasted
• 1 stick cinnamon
How to : Blanch, skin and chop tomatoes. Heat up the oil in a saucepan and brown the chicken breast in it. Add cinnamon stick, tomatoes, stock, salt and pepper. Heat the pan until it is just boiling, then cover and carefully simmer for around 30 minutes, removing the lid towards the end of the cooking time.
In the meantime, cook the prunes in water with honey, ginger, raisins and saffron for 15 minutes, until soft. Place the chicken breasts in a pre-warmed serving dish and keep warm. Allow the cooking liquid to reduce a little. Add the prune mixture and heat both for around 1 minute. Pour over the chicken breast and sprinkle over toasted sesame seeds.
Serve with rice.
