Brazo de Mercedes is a meringue roll cake that is very popular in the Philippines.
You will need:
3 eggs
1/3 cup powered sugar
1/2 cup condensed milk
1/3 tsp cream of tartar
Procedure:
Separate egg yolk from egg white. Set aside.
For the base mixture:
Beat egg whites.
Gradually add sugar.
Add 1/3 tsp. cram of tartar and mix it until soft and fluffy. (This should double its size) Set aside.
Grease a steam-able pan container with oil and pour base mixture into it.
Cover and steam the mixture for about 10 minutes. Let it cool and set aside.
For the filing:
Mix the condensed milk and egg yolk well.
Cook for 10 minutes and let it cool. Set aside.
Preparation or plating or whatever you wanna call it:
Put the cooled base mixture in a pan and pour the cooled filling on top pf the base and put another layer of base mixture on top of filling. Dust with powdered sugar.
