Hello to all my beautiful read.cash friends how's your days today?my day is always busy as usual, but still thankful because God give me strength to do all my work every day. I want to be productive everyday .by the way I cook some Egyptian food today.

Delicate flavor packed fried eggplants and Bell pepper tomatoes garlic and vinegar, this humble Egyptian dish make a great vegetarian main with my favorite Arabic bread or Egyptian bread. You can serve also as a side this or as an appetizer.but for me this good with the rice.

First wash it good the Bell pepper and the eggplants and tomatoes, remove the peel of eggplants with knife re peeler,then cut in thinly slice, cut also the bell pepper with long size.

Heat the oil in heavy flying pan ,better if you put more oil if not enough the oil eggplants will absorb it. Medium heat should be fine. fry the eggplants in one side until you see the edge turning brown then flip over on the other side.when eggplants turn in nice golden brown remove with spatula. Use the same method when you frying the bell pepper.

You must prepare a tray with paper towel to arrange the eggplants and Bell pepper to allow any excess oil to drain.

i have some tips for you to not become soggy the eggplants when you fry like a sponge or soft,when you slice the eggplants put some salt on the two side and leave it for sometimes before you fry.

Finally for making the garlic and tomatoes, put some oil in saucepan put the garlic saute then add tomatoes mix with garlic, then put the vinegar let it boiling to cook completed

Then assemble the fried eggplants dish,grab a serving dish layer the vegetables beginning with the layer of eggplants top with bell pepper and tomatoes, then repeat same method.

This a layer of eggplants bell pepper tomatoes with garlic and vinegar

This eggplants you can put in a refrigerator with airtight container for 3 to4 days.you can serve cold as a salad or room temperature or you can heat as you like
