Jam is prepared by boiling fruit with a sugar solution until it forms a 'gel' which sets on cooling. For jam to keep well, the sugar concentrations should not be less than sixty-five per cent otherwise moulds will grow on it in no time.
Β°β’β’Proportions of ingredients requiredβ’β’Β°
β 800g (2 lbs) of fruit
β 800g (2 Ibs) of sugar
β 1 litre (2 pints) of water (reduce water for pawpaw)
β 1 medium size root of ginger
β 1 lemon (squeezed) juice
Β°β’β’Methodβ’β’Β°
β Wash, peel fruit and remove seeds if any.
β Cut fruit into cubes (or gate if possible).
β Wash and grate ginger.
β Grease the pan or pot to prevent fruit from sticking to the pan.
β Put grated fruit, ginger and water into the pan and boil until it becomes very soft.
β Remove from heat, add sugar, stir to dissolve and add lemon juice.
β Return to heat and continue to boil till jam sets.
β Pour jam into sterilized jar(s) or bottle(s) whiles still hot and wipe sides with warmth cloth.
β Cover the jar(s) or bottle(s) and label with dates.
