Second, the head and viscera are cut off.
Third, a longitudinal cut is made from the front to the tail.
Fourth, insert the thumbs separating the meat from the bone, remove the bone and that's it, you have a butterfly sardine.
Wait a minute, that does not go this far, because I am going to recommend you the sardine head soup, we have learned to survive, exactly we prepare the soup, add some other type of fish and take out the sardine heads that will be part of our pet's food.
With the rest of the cut, we separate the viscera and part of the blood, this I take it to the composter for 3 months, once decomposed I mix it with sand and clay for the orchard or ornamental plants.
The bone together with the heads are part of the pet's diet, it is mainly prepared with rice.

Feliz día amigos, en esta sesión de fotos muestro la manera como preparo las sardinas tipo mariposa.
Primero se escama desde la cola hacia la cabeza
Segundo se corta la cabeza y las vísceras
Tercero se hace un corte longitudinal de la parte frontal a la cola
Cuarto, se introducen los pulgares separando la carne del hueso, se retira el hueso y listo, tienes la sardina tipo mariposa
Un momento, eso no llega hasta aquí, porque les voy a recomendar la sopa de cabeza de sardina, hemos aprendido a sobrevivir, exactamente preparamos la sopa, agregamos algún otro tipo de pescado y sacamos las cabezas de sardina que formaran parte de la comida de nuestra mascota.
Con el resto del corte, apartamos las vísceras y parte de la sangre, esto lo llevo al compostero por espacio de 3 meses, una vez descompuesto lo mezclo con arena y arcilla para el huerto o las plantas ornamentales.
El hueso conjuntamente con las cabezas, forman parte de la dieta de la mascota, se prepara con arroz principalmente.
