Stick them in the largest pot you have, add a whole onion, a couple gloves of garlic, a couple bay leaves, some pepper corns and fill with cold fresh water, bring to boil and boil for 2 hours, let it cool down a bit, transfer to a large bowl via a sieve. Rinse out cooking pot, throw away bones ect, transfer back to big pot again via sieve and leave overnight to cool.
Carefully remove as much of the fat from the top as you can using a big spoon or a ladle.
Start to reheat, you can add some left over turkey to the pot if you like or leave it as just liquid. Bring to boil, simmer for 5 minutes and serve with fresh bread. Full of flavour.
