As promised, here's ube and coco delights for me. For me lang kasi ako lang matakaw sa purple food and also sa coconuts and my baby niece and nephew only want these as an added flavor to something sweet and cold foods. And since we have no electricity at past 8 a.m. this morning, I finished cooking before the power was back on at 6 p.m. We have no idea about the power interruption but I saw a social media post just this afternoon from our electric cooperative's Station 1 about a power interruption scheduled today. But we are in different station or area so I don't know why we have it here also. Parang alam ng company na excited ako magluto today eh, and if may kuryente ma-delay kasi mag-oonline muna ako haha! So because of unexpected power interruption, I made ube halaya and lugaw before making coconut oil. We call it lugaw here but it's bilo-bilo in Tagalog or dessert made from sticky flour in coconut milk and sugar. And since we have no available sticky rice, I mixed red and white rice and added coconut strips and ube dice. Naging sticky din naman siya konti, so it's okay for me. I made these all in just one day but ube halaya and lugaw will last for maybe 2-3 days and the coconut oil for 1 month or more. Yes, 1 month or more since we can live without oil for a month or longer than that hehe. It's just that the one I made last week were consumed fast because I'm cooking scrambled eggs for our furbaby and sometimes I mixed it to all our dogs' food. I also stored some boiled ube slices in a jar and this will last for weeks or months if I want to make another dessert. But maybe I will just eat this as a plain snacks in few days. Idol ko kasi ang mga langgam kaya I stored some foods good for few days to avoid hunger while it rains, este while grinding online haha! As if wala nang makain ano, but it will save more time lalo na shifting yung pang-inis ng power and internet connection eh, para iwas lugi sa binabayaran. Happy and Blessed weekend everyone!

Sinamantala muna pala gawin sis habang walang connection. Galing nung coco oil mo sis good for 1month naalala ko nung bata pa ko ginagawa ko yan hindi na bibili..sarap po ng ube halaya.
Yey, natuloy na din ang ube halaya. Both favorite ko sila ng bilo-bilo. Di ako nagsasawa kahit umabot pa ng ilang araw yan. Kala ko totoong lugaw na kanin niluto mo sis, pwede din sila combi, sweet and medyo salty.
Ohhhh how can you live without electricity for so many hours??? I think it's too difficult!!!! Anyways your ube look delicious and full if nutrients

Pahingi naman sis ng ube halaya... Ang sarap nyan, bihira lang akung makatikim nyan dito. Tapos ang iba namang nagtitinda nyan, sasabihin ube sa daw, pero sa totoo lang kinulayan lang naman nila ang kamote. Hehe..
