Today Lunch - Shrimp risotto πππ
π¨βπ³Simple but delicious recipe. π¨βπ³
π¨βπ³1.- Cut the onions(2-3 onions depending on the size), carrots, selenium root,garlic and carrots in tiny little pieces. Dump them into a pot on olive oil and stir it for about 20 minutes. Until veggies are blended well,soft, and get golden brown color. Don't add any spices yet. Not even salt.
π¨βπ³2. Add the about 4-5 cups of water. Stir it a bit. For two persons add 3-4 hands of rice. And let the rice cook in that water and veggies so it soaks in all the veggies tastes for about 10 min or until rice is half done. Be careful that you always have enough water. And stir every few minutes.
π¨βπ³3. Add spices. I used paprika, curcuma, curry, bit of chilli pepper, cumin, tiny peace of fresh ginger, and salt. You really can't miss with how much you add. Only be careful with salt and chilli pepper. Stir it all up. Taste after few minutes and add the shrimp.
π¨βπ³4. Stir the shrimp for 3-4 minutes. Add half of glass of white wine and let it cook for another 5 min. Once the rice is nearly done add a bit of parsley. Take it off fire and let it sit for 10 min so all the tastes soak in further into rice.
Ready to serve ππ¨βπ³
We made a salad from lettuce, carrots, and red pepper on the side with a bit of olive oil and apple cider vinegar and salt to season it. Absolutely delicious. πππ
How was this? Well, my father showed you how his plate looked after he ate it. To say at least that plate doesn't even need to be washed now ππ
