Today I cooked one of my favorite Dishes.
It is popular in various provinces of the philippines. and this is what they called PINAKBET.
What is PINAKBET ?
Pinakbet is an indigenious Filipino dish from the northern regions of the philipines. Pinakbet is made from mixed vegetables steamed in fish or shrimp sauce. The word is the contracted form of the Ilokano word Pinakebbet, meaning 'shrunk ' or 'shriveled'.
There is a lot of diffirent variety version of cooking pinakbet.
But i prefer to cook the originated ilocos version.
Now, I will tell you what it's ingredients and how we cook this dish.
Ingredients :
2 cup leftover lechon kawali ( preferably bagnet ) or boiled pork belly 5 pieces eggplant 3 pieces bitter melon ( ampalaya ), pith removed, sliced into inch pieces 12 pieces okra 1/2 kabocha squash ( kalabasa ), peeled and cube 1 thumbsize ginger, sliced into strips 1 large onion, diced 3 medium tomatoes, chopped 2 cloves garlic, minced 1/4 cup anchovy ( fish sauce/ bagoong ), mixed with 1/2 cup water then strained before adding
And here's the Instruction how to cook it.:
● Layer the vegetables starting with what goes on the bottom: squash, bitter melon, okra, eggplant, tomatoes, ginger, garlic and onions.
● Add the bagnet or pork belly (lechon kawali ) and Anchovy mixture. Cover and bring to a boil and simmer.
● Simmer until almost all liquid has been reduced and become thick.
And that's an easy way to cook a pinakbet dish.
After cooking our pinakbet dish, i also cooked fried fish for a delicious and better combination.😉🤩
