How to make ube cheese pandesal?

Pandesal is the most popular bread in the Philippines. Since the name Pandesal is originated during 16th Century Spanish Colonial Era, the term Pandesal is a Spanish term which means "Salt bread". In this Millennial Era, our traditional Pandesal made it twist by the Filipinos. It is Ube Pandesal which has a ube and cheese filling inside. If you crave for these, here's the recipe:

Ingredients you need:

  • 3 cups all purpose flour

  • 1/2 tbsp sugar

  • 1/4 cup warm water

  • 1 pouch or 2 1/4 tsp rapid rise yeast

  • 1 egg (beaten)

  • 1 cup evaporated milk

  • 1 tsp salt

  • 3 1/2 tbsp sugar

  • 3 tbsp unsalted butter (softened)

  • 2 tbsp ube flavor extract

  • cheddar cheese (cubed)

  • extra flour for kneading

  • plain bread crumbs for coating

Intructions for cooking:

  • Dissolve the yeast into warm water (not too hot). Stir to dissolve the yeast and let it stand for about 10 minutes. Then set it aside.

  • While waiting for yeast to bubble, put the evaporated milk, butter, sugar, and salt into a microwave safe bowl or saucepan. Microwave it for around 1 minute or heat over low heat on the stove.

  • In a mixing bowl, combine the egg, 2 cups of flour and yeast mixture. Mix it well until you can't see whites in the mixture.

  • Once the mixture of the milk is cooled down, add it to the flour/egg/yeast mixture.

  • Add ube flavor extract.

  • You can add another 1 1/4 cup of flour then add 1 tbsp at a time (if needed). Continue mixing until a dough is formed and clean sides of bowl. Form the dough into a ball.

  • Grease the bowl with oil and transfer the dough into the bowl and cover it with a damp cloth or food warp then let it rise in a warm place for an hour.

  • After the dough is rise, punch it down and transfer it to a floured surface or baking mat.

  • Divide the dough into two equal parts.

  • Roll the dough until it form into a log then cut it equally.

  • Take 1 piece of dough, flat it with your fingers then add the cheese in the middle. Gather edges to seal and form small dough balls, coat with bread crumbs and place on baking sheet or in a greased pan.

  • Cover the tray or the pan with damp cloth or food wrap and let it rise for about 20-30 minutes.

  • Preheat the oven 350 degrees F.

  • The bake the ube pandesal for about 18-20 minutes. Serve immediately!
