Indang's birthday
March 9, 2022. It's 4 am and I feel hot though I hear rain drops in our roof right now. Dawns are not always cold, only the part where the sun's rays pushes itself to the darkness.
I woke up early because my son vomited again, he just finished his milk in a bottle then coughed and vomited it all out, I looked at the clock and decided not to go back to sleep. Czak fell asleep past 10pm last night, he was hyper because of all the sweets he took at dinner.
It was Indang's birthday, her 46th. She was the eldest daughter and I was the youngest, I'm 28, and we had an 18 year gap. Our parents decided that we should have a large age gap so they wil be able to provide us our need especially at school. By the way, there are 4 of us and honestly, I don't know other's ages.
so here is Indang's preparation for the celebration
She prepared red velvet cake! Too bad I missed seeing how she made this one, a new flavor to he cakes. She had been making chocolate moist cake since she knew how to bake and its kind of boring already. I love her convection oven! It does so much, sometimes I borrow it and make my own cake. She acquired he oven for free, yeah you heard it right for free. She enrolled once in Tesda, I don't really know the term but it's related to baking but then they didn't finish it, pandemic came and all was gone until all of the enrolees were called and this convection oven as well as other baking materials were given to them mid 2021. Of course she was very happy to have it and I was too.
Her never ending chocolate moist cake. Few of the ingredients of this cake is vegetable oil, to look moist and venigar to make the cake Fluffy. Of course, the basic ingredients flour, eggs and all. I used to make one of these but I cut the sugar in half, instead of putting 3cups,I only add one and half. 3 cups on this cake is too sweet, risky for ugh blood sugar. Better be careful than sorry, right?
This is the cake in the oven. She was not yet finished baking when I arrived from work.. At first, I thought electric convection oven uses lots of electricity but it's not really. Last November, while making lots of cakes, we only paid less than 200 pesos in our monthly bill given we only have washing machine and lights and a small television at home plus pjone charging.
She also prepared mango tapioca. When I arrived from work, I saw her shredding the jelly. But when she fetched her tapioca, it was like a whole pot was one. It all sticked together because she did not wash it with cold water after it was cooked. Just like spaghetti pasta, tapioca are meant to be cooled after cooking.
This was not yet finished but I insisted on taking pictures already, also, she forgot to put sugar in the jelly that is why the condensed milk she allocated did not make it sweet enough. So she asked someone to buy another can of condensed milk, I put it in and voila! Perfect.
Kuya Alex was asked to slice the mango so all of my 3 kids hovered and waited for him to be finished so they can have the seed. And they all enjoyed it.

Czak did enjoy the mango, I don't usually buy mango in the market, we only give them naturally riped mangos from the tree itself.
Her is indang cooking the pork viand, I don't know what's it called but it sure is delicious. She really is talented in the kitchen.
After eating, I did all my best to do the dishes but Czak asked to go home already. While I was washing plate, he pulled me and said "uli". Maybe he was sleepy at that time but when I put him to sleep, he suddenly got hyper. He slept past ten.
So this is how Indang's birthday celebration went. We all enjoyed and we are full.
