It turns out that this filled cookie, was born in Andalusia Spain, by the 1200s, and decided to call it Alfajor, the cooks of that time, noticed some similarity between this cookie and mamoul, a sweet butter, sprinkled with sugar, this sweet is found in some areas of Africa and the Middle East, but in South America, the first country where they started making Alfajores, was in Argentina, in 1869, and the person responsible for creating such a rich dessert, was Don Augusto Chammás, Chemical Profession, born in France, Together with his family, they created a small family business, where they began to sell this sweet, round, and called Alfajor, however as time passed, it was expanding to other countries, in Venezuela there is no specific data in which year, began to consume such delicious cookies, but they are well known throughout the country, and loved, so today in Gastronomy with History, we will learn how to make them in the simplest and most economical way possible, so please let's put on the apron, we wash our hands and cook.
Ingredients
250 grams of margarine
150 grams of sugar
3 egg yolks
1 small spoonful of vanilla essence
200 grams of wheat flour
300 grams of cornstarch
2 small spoonfuls of baking powder
400 grams of dulce de leche
1/2 cup grated coconut
How do we prepare them?
Before starting the preparation, we recommend that if you are not of legal age, you follow these steps, accompanied by an adult, to prevent accidents in the kitchen, now yes, to prepare such delicious cookies;
The first thing we must do is to turn on our oven and place it at 180ºC. While we are preparing the cookies, we will already have our oven hot and ready to bake our preparation.
We are going to place a container or container, as you prefer to call it, and we are going to mix our margarine with the sugar, the idea is to have a very smooth cream, joining these two ingredients.
Once our cream is ready, we will break an egg and pour the yolk into our container or bowl, and we will begin to beat all these mixtures, when we see that it is changing its texture and consistency, we will add a few drops of vanilla essence to give it an even richer flavor, then we will continue beating, so that the vanilla is integrated.
While we continue beating and mixing, we will add the remaining egg yolks, stirring constantly, the idea is that we continue joining each ingredient, trying to have a fairly consistent cream.
The next thing to do is to add the flour and cornstarch, but before doing this step, these must be sifted, to have a smooth mixture, and without lumps, which really damage any dessert, when we have sifted everything, we will add them in our container, and mix again, no doubt we will leave the kitchen as Jhonny Bravo, very muscular.
After the flour and cornstarch are well integrated, and we see that there are no lumps, we will begin to knead, gently, for about 5 minutes, we will remove the dough from the container, and we will place it on a surface that is properly clean.
With a rolling pin we will try to extend our dough, but the ideal is to leave a thickness of 0.5cm. When we have everything ready, we will make circles to the dough, 3 to 4cm in diameter, we are making different cookies, so the idea is that they are perfectly round, after having them all, we will take them to a baking tray, but not without first, flour the tray, so that our alfajores do not stick.
We will bake them for 5 to 7 minutes at the most, the ideal is to be attentive, and avoid burning them, because the truth is that nobody will enjoy them, when they are ready, we take out the tray very carefully, we do not want to burn ourselves, and we let them rest.
When they are at room temperature, we will look for Chocolate or Sweet Milk (Arequipe) and fill one of the cookies, then we will place another one on top, and we will have our filled cookie, on a plate, we will place our Shredded Coconut (If you do not have or can not get shredded coconut, you can use sugar or flour), we will pass our cookie sideways, between our shredded coconut, and we will see how the sides are filled with it.
