Veggie burgers
Here is a recipe for veggie burgers:
Ingredients:
1 cup cooked and mashed black beans
1 cup cooked and mashed sweet potato
1/2 cup rolled oats
1/4 cup chopped fresh cilantro
1/4 cup diced red onion
1 clove garlic, minced
1 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Instructions:
In a large bowl, combine the black beans, sweet potato, oats, cilantro, red onion, garlic, cumin, chili powder, salt, and black pepper. Mix until well combined.
Form the mixture into 4 equal-sized patties.
Heat the olive oil in a large skillet over medium heat. Add the patties and cook for 5-6 minutes on each side, until they are heated through and slightly crispy on the outside.
Serve the veggie burgers on buns with your choice of toppings, such as lettuce, tomato, avocado, and mustard. Enjoy!
Note: You can also bake the veggie burgers instead of frying them. Simply preheat your oven to 375°F (190°C) and bake the patties for 20-25 minutes, until they are heated through and slightly crispy on the outside.
