Vegetable Pancakes
Recipe for vegetable pancakes:
Ingredients:
2 eggs
1 cup chopped vegetables (e.g. zucchini, bell pepper, cauliflower)
¾ cup flour
¼ cup milk
1 teaspoon oil
salt and pepper to taste
Instructions:
In a large bowl, mix together the eggs, flour, milk, and chopped vegetables.
Season with salt and pepper to taste.
Heat oil in a hot pan.
Drop a spoonful of the mixture onto the pan and press it down to form a circle.
Cook for about 2-3 minutes on one side, until a golden crust forms.
Flip the pancake and cook for an additional 1-2 minutes on the other side.
Serve the vegetable pancakes warm, with cheese, hummus, or other sauce of your choice.
Note: If you want the pancakes to be softer, add more milk to the mixture. If you want them to be firmer, add more flour. You can use any type of vegetables you like, and you can also add herbs or spices to taste, such as parsley or basil.
