Pesto Pasta With Vegetables
Here is the recipe for Vegetable Pesto Pasta
Ingredients:
250 g pasta
3-4 cups vegetables of your choice (e.g. tomato, zucchini, asparagus)
1/2 cup olive pesto
1/2 cup cheese of your choice (e.g. parmesan or feta)
Preparation:
Cook the pasta according to the package instructions in a pot of boiling water.
In a pan, heat a little oil and add the vegetables. Fry until they become tender, and then add the olive pesto.
While the pasta is cooking and the vegetables are frying, blend the mixture in a blender or with a fresh mixer until smooth.
When the pasta is cooked, drain it and return it to the pot. Add the fried vegetables and olive pesto and mix well.
Serve hot, optionally with cheese on top.
If you want, you can add some additional spices to taste, such as parsley or chili pepper. You can also add some cooked meat or fish if you want more protein. Enjoy this delicious and healthy pasta!
