Zucchini cream soup is a nice and gentle soup that is easy to prepare and is ideal for colder days.

Ingredients:

  • 1 medium pumpkin

  • 1 onion

  • 1 head of garlic

  • 1-2 cloves of white garlic

  • 2 potatoes

  • 1 liter of water or vegetable stock

  • 1 cup heavy cream

  • salt and pepper to taste

  • oil for frying

Preparation:

  1. Clean and dice the pumpkin, onion, and black garlic.

  2. In a pan, heat a little oil and add the onion and black garlic. Fry until they become soft.

  3. Add the pumpkin and potatoes and fry for a few more minutes.

  4. Then add the water or vegetable stock and cook until the vegetables are softened.

  5. In a blender or with a fresh mixer, blend the mixture until smooth.

  6. Return it to the pan and add the heavy cream and salt and pepper to taste.

  7. Cook for a few more minutes to allow everything to come together.

  8. Serve hot, optionally with bread or crackers.
