Great for when you want a lighter lunch or dinner and don’t want to turn on the oven in the summer heat.
**About This Recipe**

Total Time: 15 minutes
Ingredients
1) Dressing
1 1/3 tablespoons (20 ml) brown sugar
1 1/3 teaspoons (7 ml) canned mandarin juice
1 1/3 teaspoons (7 ml) soy sauce
2 2/3 teaspoons 14 ml) sesame oil
1/4 cup (40 ml) vegetable oil
2 tablespoons (30 ml) rice vinegar
2) Salad
2/3 small romaine lettuce, torn in pieces (or use a iceberg lettuce, chopped)
2 2/3 cooked boneless skinless chicken breasts (shredded or chopped)
2 green onions, chopped
1/4 cup (60 ml) coarsely grated carrot
1 1/3 cups (300 ml) dry chow mein noodles (can use more or less)
1/4 cup (60 ml) toasted slivered almonds or 1/4 cup (60 ml) chopped peanuts
2/3 to taste canned mandarin oranges (drained, reserve 2 teaspoons / 10 ml juice for the dressing)
Directions
Mix all dressing ingredients until well combined; refrigerate for a minimum of 1 hour.
In a large bowl combine the lettuce with chicken, green onions, dry noodles, carrot and slivered almonds or chopped peanuts; mix to combine.
Pour on the dressing; toss to combine.
Top with mandarin orange segments.
Serve immediately
