I made this the other night. I had never considered kiwi as an option for a salsa before, but this tasted great. First I sliced some scallions and put threw them in a pot with a little butter. Then I added rice and stirred it until the butter was coating the rice. Then add water, bring to a boil, and let simmer for 15 minutes (or until water is gone and rice is done). While the rice cooks, slice and dice a kiwi and a tomato. Mix in a bowl with cilantro and a squirt of lime juice. Then cook chicken in a drizzle of olive oil with southwest seasoning. Cook till the chicken is done (like 7 minutes or so). While the chicken and rice are cooking, mix sour cream with a pinch of chipotle powder in a bowl and add water till it reaches a consistency that'll allow it to drizzle. When the food is all finished cooking, put it in a bowl (rice, then chicken, then kiwi salsa, then sauce). Add a lime slice on the side.
