These were super easy to make. Just marinate the chicken in a little pineapple juice with southwest seasoning while you slice an onion. Then mince part of the onion and mix with pineapple, lime juice and cilantro in a bowl. Throw the rest of the sliced onion on the stove top and cook for a few minutes until softened and brown. Then add the chicken you were marinating. Once the chicken is cooked through (like 7 minutes on medium high heat), you're ready to serve. Put the chicken in warm tortilla shells and top with the pineapple salsa. We added some sour cream and a little more cilantro on top as well.
