I'm not a big soup fan but I wasn't feeling well the other night so I thought I'd try to make a chicken soup. The soup was a chicken sausage, chickpea and spinach soup. It only took about 20 minutes to make and it tasted great.
First you dice an onion and brown it in a pot for about 5 minutes with a little olive oil. Then you throw in some chicken sausage and cook it all the way through with the onions. Then you add one and half cups of water, a cup of chickpeas (that have been softened in water over night or that are from a can), a teaspoon of chicken stock, a little salt and pepper, and some italian seasoning to the pot. Bring it to a boil while stirring frequently and then cover the pot and reduce to a simmer for ten minutes (or until you're sure everything is cooked through). After that time has passed, uncover the pot. Throw in a handful of spinach leaves and let simmer for 3 minutes or until the leaves start to wither a bit. Then serve.
And try not to burn your mouth while eating... which is what I did. Like an idiot.
