There is no way to say exactly who or what people started eating bamboo shoots as food. However, from various historical sources, it is known that the Chinese have a long history of eating bamboo coral or young bamboo shoots as food.
It is known that the Chinese used various things made of bamboo from about seven thousand years ago. During the reign of the ancient Ki Tang (618-906 BC), the Chinese considered young bamboo to be a valuable food. They also consider bamboo as a symbol of virtue.
