In eastern Venezuela it is very common to eat fish, since it is a coastal area. The cazon or chucho cake as some locals call it is very popular in this area of my country.
Recipe to prepare cazon cake:
Ingredients:
1 kilo of cazon
3 carrots
8 potatoes
3 ripe bananas
8 eggs
Chili, coriander, onion, garlic
Pepper and salt to taste
Preparation:
The first thing we do is wash the fish very well and put it to boil for approximately 30 minutes. After this parboiled I crumble it. We cut the potatoes, carrots and the banana into thin slices. The dressings are cut brunoise type.
We fry the dressings with butter and then we add the crumbled cazon, add salt and pepper to taste. At the same time we fry the bananas and boil the potatoes and carrots.
When the fish, bananas, potatoes and carrots are cooked, we begin to assemble the cake, for this we beat the egg whites until stiff, then we will add the yolks.
Spread butter in mold and place a layer of egg, potato, cazon, carrots and bananas, this procedure is repeated several times until the ingredients are exhausted. Then we put in the oven for 30 minutes.
To accompany this delicious cake we can prepare some arepas and a delicious cold lemonade.
