Hi i want to share the unique way of cooking a dinuguan of kapampangan..
How to prepare and cook Dinuguan Kapampangan
First) In a pot, heat a tablespoon of cooking oil and saute the garlic until fragrant and then add onion and saute it until soft. You can also season with pepper this is optional only..
Second) Pour the fish sauce (patis) and let it simmer for half a minute and then you can put the pork in the pot. Time to increase the heat and start stirring.
Third)Stir fry the pork until its turning brown and render some of the fat. Remove the fat from the pot and leave just a small amount for the dish.
Fourth)After that, pour the vinegar in the pot and let it simmer for 2 minutes without stirring and then pour the water in the pot and boil..
Fifth)Just let it simmer until the pork is tender.and then put or add pepper and finger chilies. Simmer again for 2 minutes,then adjust the taste if necessary.
Sixth) Pour the pork blood and boil without the lid of pot. then add some sugar if the broth is too sour.
Seventh)Sugar is just for balancing the taste of the vinegar if this is too sour. Cook for another 3 minutes or until the blood is well cooked.
Ingredients
1 1/2 kilo pork mask
3 cloves of crushed garlic
1 onion chopped atleast medium sized
1 or 2 table spoon of cooking oil
3 tsp. fish sauce (patis)
3/4 cup vinegar
4 cups water
5 pcs finger chilies
1 cup pork blood
salt and pepper to taste
sugar to taste
You can also serve it with puto
this is good for 8 servings..
