Eggplant with yogurt ๐Ÿ†

Hi everyone โ˜บ๏ธ

I'm back with my new recipe ๐Ÿ˜ƒ Maybe this one is new for you all because it's very rear in my country ๐Ÿ˜œ I learned to make it from my Father ๐Ÿ˜๐Ÿ˜‡โ™ฅ๏ธ It is very easy to make.

So let's start this, It has 3 steps I'm gonna Explain each and every step for you all ๐Ÿ˜

Ingredients:

  • Eggplant (Round shape) half kg

  • Oil for frying

  • Onion 1Cup

  • Crushed garlic 1 Tsp

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Coriander powder 1 and half teaspoon

  • Cumin powder 1 teaspoon

  • All ground spices powder 1 teaspoon

  • Salt as per your taste

  • Water 2 cups

  • Yogurt half kg

  • Mint leaves half cup

  • Green chillies 3 , 4

  • Salt for yogurt as required

Instructions for 1st step:

Frying eggplant ๐Ÿ†

Firstly, you have to cut eggplant in round shape

  • Like shown in above picture, after cutting Dip all of it in a bowl of water for 15 Minutes,set aside.

  • Now heat oil in frying pan and start frying them.

Step 2: Making Gravy

  • Take 2 Tsp oil in a sauce pan

  • Saute Onion until it turns golden brown

  • Then add crushed garlic and keep stirring

  • Now add all powdered spices chilli, turmeric, coriander, cumin powder.

  • Add 2 cups of water and cook untill it becomes a thick gravy.

Step 3: Yogurt

  • Blend and make a paste of green chillies and mint leaves with the help of little water.

  • Now mix the green paste with yogurt and salt as required and mix them well.

Final step: Assembling

  • In a plate , Make a first layer of fried eggplant

  • Second layer of the gravy

  • Now the third layer of yogurt which we made with green paste ๐Ÿ˜

For garnish , I used fried onions and tomatoes rings with green fried chillies ๐Ÿ˜ That it

Ready to eat ๐Ÿ˜โ™ฅ๏ธ give it a try friends , I promise you will enjoy each and every bite of it๐Ÿ˜๐Ÿ˜โ™ฅ๏ธโ™ฅ๏ธ
