One of the many things that I miss is my fellow fish (Pisces here! 😆) - fresh and cheap. Papa wakes up early in the morning in his hometown, in Zamboanga del Sur, and goes to the seashore where the fishermen are selling their freshly caught fish. Papa can cook, but not like Mama. But when I stayed there for a month in 2019, he always cooked Tinolang Isda (fish) because it's easy and his favorite. Yes, there's no meal in a day that Tinolang isda is not present. Lucky when we have fried or grilled fish. I jokingly said to him that one more Tinolang isda on the table will give me gills and scales. (Matubuan najud kog hasang ug kaliskis ani, Pa.) He laughed and asked me what dish I want to eat, and of course, it's Escabeche. Even our employees were happy when the food on the table is not Tinolang isda. 😆 His hometown is a secluded area near the sea, hence the fish and seafood galore. 😁
