Sprite Pork Adobo

One of my favorite adobo recipes is Sprite Pork Adobo. It is a sweet Filipino Adobong Baboy version wherein lemon or lime soda pop such as Sprite is used instead of adding sugar to add sweetness to the dish. This might not be a common method in cooking pork adobo, but the result of this recipe is promising. In fact, the final outcome was delicious and the meat was as tender as I wanted it to be.

There are two keys to make the dish a success. The first is to ensure that the pork is flavorful and the second is to make it as tender as possible, so that it can be easier to chew. Flavors were infused to the pork when it was marinated in Sprite and soy sauce. During this 3 to 6 hour process, the meat tends to absorb the marinade. This remains intact even while the pork cooks. Making the pork tender means using the proper amount of heat at a given interval, this means cooking the pork belly between low to medium heat for around 1 hour or so.

You will like the outcome if you are a fan of adobo that is kind of on the sweet side.

One thing to consider is the meat that you will be using for this recipe. Pork belly is ideal because it has the fat to meat ration that I prefer. However, pork butt or shoulder can also be used. I like to use fatty pork cuts when cooking adobo because the fat helps make it moist. This makes the meat more pleasurable to eat.

Ingredients

2 lbs. pork belly cubed

7 tablespoons soy sauce

4 tablespoons white vinegar

1 can Sprite or similar soda pop

1 piece onion minced

5 pieces dried bay leaves

1 ½ teaspoons whole peppercorn

5 cloves garlic crushed

½ cup water

3 tablespoons cooking oil

Instructions

In a large bowl, combine soy sauce and Sprite with the pork belly. Mix well. Cover the bowl and refrigerate. Let the pork marinate for at least 6 hours.

Using a kitchen sieve, drain the marinade out of the bowl. Set it aside.

Heat oil in a cooking pot

Once the oil becomes hot, saute garlic until light brown

Add onion. Continue to saute until soft

Add pork belly. Stir and cook until light brown

Pour the marinade (Sprite and soy sauce). Cover the pot and let boil.

Add whole peppercorn and dried bay leaves. Cover the pot and continue to cook for 30 minutes in medium heat.

Pour vinegar into the pot. Let the liquid re-boil. Stir. Cover and cook for 25 to 30 minutes. Note: add water if needed.

Transfer to a serving plate. Serve with rice.
