Love this recipe for fresh lumpia. This is a kind of Filipino Spring Rolls that is filled with different kinds of vegetables, sweet potato, shrimps, and meat. Wrapped in a crepe-like wrapper and coated with a special sweet-savory sauce.
Fresh lumpia is another version of Filipino spring rolls. It translates to Fresh Spring Rolls. The filling is composed of different kinds of vegetables, some shrimps, and meat. Firm Tofu may also be added. The filling is then wrapped or rolled in a crepe-like wrapper. It is called fresh because you do not fry it as we do in other spring rolls, like lumpiang shanghai and fried lumpia or tofu. It also has a special brown sauce that is sweet and savory and then has toppings chopped peanuts.
The sauce is a breeze to make. It is mainly a concoction of water, soy sauce, brown sugar, cornstarch, and garlic, cooked until it becomes thick and flavorful.
Fresh lumpia also served as appetizers but it is also popularly eaten as an afternoon snack or for those who want to have a light meal (or lose weight), it will also be perfect for dinner. Most recipes would ask for pork belly strips for the filling but I used ground pork instead. It not only lessens the cooking time but I also liked that the meat is better distributed or mixed with the veggies.
I always cook fresh lumpia for breakfast, lunch, dinner, and snacks. My husband and my daughter love it. Especially the taste of the brown sauce. They want the thicker one sauce. Today, I am going to share my fresh lumpia recipe.
Ingredients:
3 eggs
1 1/2 cups cornstarch
1/2 tsp. salt
2 1/4 cups of water or fresh milk
3 tbsp. oil
Procedure:
Mix all ingredients with a wire whisk until it becomes smooth.
Cook and grease oil on a heated non-stick pan.
Cover and set aside.
Fillings:
Ingredients:
1/4 cup oil
1 tbsp. minced garlic
1/2 cup minced onions
1/4 kilos ground pork
1/8 kilo minced shrimps
1/2 kilos shredded ubod
100 grams shredded carrots
100 grams shredded singkamas
1 1/2 cups shredded cabbage
1 sweet potato cube slice (medium)
1 1/4 cups water
1 tbsp. oyster sauce
1/2 tbsp. salt
1/4 tsp. black pepper
Procedure:
Heat oil. Sauté garlic and onions.
Add the ground pork and shrimps.
Add the vegetables.
Season with oyster sauce, salt, pepper.
Add water. Cook until done.
Drain. Save the drippings for sauce.
Sauce (Brown sauce)
Ingredients:
1/4 cup sugar
1 tbsp. oyster sauce
1 1/2 cups water
2 tbsp. cassava starch
1 tbsp. minced garlic
1/4 cup roasted and crushed peanuts
Procedure:
Mix all ingredients except garlic and peanuts in a saucepan.
Bring to a boil and cook until the mixture thickens.
Serve with crushed peanuts and garlic.
Fresh lumpia is one of our favorite Filipino dishes. This is my dietary dish because it is light and healthy. The final product of this is really good and delicious, so I think this recipe is enough to satisfy your cravings.
