I'm going to show you how to make a simple dish that is easy to make. And it may be a view that has been seen but never known before. But it may not be the master chef in each place. But it's something I normally eat.
The first dish. My own curry
You've seen a lot of curry. But you may not know that there are different types of chili used in curry and that there are different types of chili paste ingredients that make different curry.
The ingredients of the curry paste
dried chili
thai onion
thai garlic
lemon grass
galingale (Kaempferia)
kaffir lime skin
galangal (Alpinia galanga)
coriander root
salt
All of these are just ingredients of chili paste used to make curry.
Grinding the chili paste with a machine won't produce lumps. And there is heat in spinning to make the smell disappear. therefore not commonly used
To grind the paste mixture, a stone mortar is usually used.
The chili paste ingredient I saw was always present in every house in the town I lived in.
To cook this dish, chili is put into coconut milk or fermented fish. boiled
Then put in the meat, when the meat is cooked, add vegetables to it and wait until the curry is boiling to finish
If you go to a small restaurant You will get curry in a cup like this.
But sometimes, if you go to a well-staged restaurant, you might see curry on a plate.
