Igado is a popular ilocano dish made from kasim and pig's innards such as liver and heart.
Marinate for Pork Inhards:
3/4 cup of soy sauce
1 small can of pineapple juice
4 cloves of garlic
1/2 tsp of ground pepper
Ingredients:
Pork kasim
Pork liver
Pork heart
1 pc medium potato
1 pc small carrot
1 pc small bell pepper
4 cloves of garlic
2 pcs. medium onions
2 tbsp of fish sauce
2 tsp of ground pepper
1 small can of liver spread
3 tbsp of vinegar
3 to 5 pcs of bay leaves
2 tbsp of Annatto oil
1 small can of green peas
Step in cooking:
Cut the meat into strips, put it in a small tub and marinate together with the soy sauce, pineapple juice, garlic, and pepper. Mix and let it sit in the fridge for 3hrs.
While waiting for the marinade, cut the other ingredients into strips. When the marinade is ready, drain the liquid and start to cooking.
In a pan, sauteed garlic and onion, one at a time. Then add the marinated meat. Stir and let it simmer for 10mins.. after 10mins. mix and simmer again for 1hr. or until meat is tender in a low to medium heat and mix occasionally.
After 1hr., add fish sauce, pepper, liver spread, and vinegar. after adding the vinegar DO NOT MIX and let it simmer for 10-15mins..
Lastly, add the remaining ingredients, carrots, potato, bell pepper, green peas, bay leaves, and annatto oil.
Transfer into a plate, Serve and ENJOY!
