BOPIS
Hello guys!
Bopis is a filipino dish made with pigs liver, heart, and lungs. It's perfect as main dish or appetizer when drinking alcohol.
Ingredients:
for boiling the liver, lungs & heart
1 lemon grass
pepper corn
4 cloves of garlic
1 ginger
For the main cooking:
1 Pork liver
1 Pork lungs
1 Pork heart
6 cloves of garlic
3 red chili (optional)
3 onions
3 tbsp of fish sauce
pepper
laurel / bay leaves
2 tbsp of annatto oil
1/2 cup of water
2 tbsp of vinegar
2 tbsp soy sauce
1 carrot
1 radish
3 green chili (optional)
1 red bell pepper
1 green bell pepper
Steps in cooking:
1. Boil the liver, heart, and lungs together with the lemongrass, pepper corn, garlic, and ginger. Boil for 1 1/2 hours. Remember, you want to do this procedure early in the morning to make sure that the liver, heart, and lungs are well cooked and to remove the smell.
2. After boiling, set aside to cool and chop into dice.
3. Sauteed finely chopped ginger, red chili (optional), garlic, and onion. One at a time.
4. Followed by the meats and add fish sauce, pepper, and bay leaves. Stir and let the meat fry for 5-10mins then add the annatto oil for color.
5. Add water, after 2min. add the vinegar and DO NOT STIR for 10-15mins.
6. While waiting chop into dice carrot, radish, and red and green bell pepper then add to the mixture.
Transfer into plate, top with red chili and ENJOY!
