Years ago you still had to squeeze the coconut milk, but in modern times coconut cream and coconut milk don't stand out from the fresh squeezed coconut milk. Same result in cooking and also delicious. Just remember that coconut cream is different from coconut milk. In this delicious tilapia recipe I use coconut cream because I prefer the sauce to be creamy. But you can also use coconut milk if coconut cream is not available.
RECIPE TILAPIA RECIPE
INGREDIENTS:
2 lbs tilapia, cleaned (about 1 kilogram)
2 cups coconut cream
1 tablespoon garlic, minced
1 medium onion, finely sliced
1 thumb ginger, cut into strips
1 bundle of pechay
1½ tbsp. fish sauce (patis)
4 pieces red tomato (optional)
¼ teaspoon ground black pepper
2 cups fresh spinach (optional)
2 tablespoons cooking oil
INSTRUCTIONS:
Heat the cooking oil in a cooking pot.
Sauté the onion, garlic, and ginger in the hot oil. Once the onion becomes soft, add the fish sauce and ground black pepper. Stir.
Pour in the coconut cream and stir. Let boil and cover. Simmer for 5 minutes.
Add the pechay and tilapia. Cover and simmer for 30 to 35 minutes. Add little water if needed.
Add the tomatoes. Cook for 2-3 minutes.
Lastly, add your spinach and simmer for 1 or 2 minutes over lowest heat.
