Lotek is a typical West Java (Indonesia) food. Its uniqueness is that tempeh is often added to the chili sauce beside peanuts and in the marinade, shrimp paste, brown sugar and garlic are added.
Lotek is generally served with lontong (rice cake) or warm rice, accompanied by crackers and fried onions. Although this food can be found easily, it is better if the lotek is made by yourself. Here's the recipe for making lotek.
Material:
100 gr kale, cut into pieces
100 gr bean sprouts
100 gr chayote, peel the skin and cut into matches
50 gr long beans, cut 4 cm
50 gr cabbage, sliced
Mashed peanut sauce:
200 grams of peanuts then fry
7 red bird's eye chilies
4 cm galangal
2 cloves of garlic
100 gr brown sugar then comb
3 gr grilled shrimp paste
1 tsp sugar
1 ½ teaspoon salt
1 tablespoon tamarind water

How to make:
1. Boil enough water in a pan, boil each of the vegetables that have been washed, can be consecutively from light to dark, cabbage, bean sprouts, chayote, string beans and kale.
2. Puree all the ingredients of the peanut sauce, red chilies, galangal, garlic. Then add the Javanese sugar, shrimp paste, granulated sugar, salt and add tamarind water. Mix everything until smooth.
3. Combine all the vegetables into the peanut sauce. Lotek is ready to be served with complementary fried onions and crackers.
