The one on the bottom left is chickpeas with meat, which is the most preferred dish especially in winter.
The one on the upper left is a "fried" dish made by frying aubergines, potatoes and peppers in oil and then pouring yoghurt over them.
The one on the upper right is pilaf prepared by roasting shallots and rice grains in butter.
The one on the bottom right is a dish called "keskek", which dates back to Ottoman cuisine. It is obtained by cooking wheat and meat for hours and then crushing it into a porridge with the help of long shovels. It is a very troublesome and difficult dish to prepare. Keeping consistency is the most difficult stage.
