FOODlog #30: Fish Porridge Cooked some fish porridge today for my family before heading to church. They aren't feeling too well so I cooked them some hearty porridge. I started with stir frying some diced carrots, slices of ginger and some turmeric powder in oil. This is to give a really nice vibrant yellow color to the porridge but not just for the color, turmeric is warm and gives heat to the body which is especially good to combat a cold.

I then wash the rice under cold water a few rounds before adding it into the wok and mixing it with the ginger, carrots and turmeric flavored oil. I cook it for a bit to let the rice toast and absord the turmeric and ginger flavors. After which I add in a dates and almond stock that my wife boiled which is good for the lungs. I then cook it under low fire for 20 minutes and season it with salt and white pepper. Lastly, I added in the fish fillets that I marinated last night with soy sauce, sesame oil, white pepper, turmeric powder, some salt, and minced garlic. After adding it into the porridge, I turn off the fire and cover the wok with a lid. Leave the lid on for another 30 minutes at least or longer. The residual heat will cook the fish to perfection.
