Greece - Food & Drinks - Side Dish: Sardeles Tiganites Filleto.

'Sardeles Tiganites Fileto' is a very easy to create side dish of the Greek cuisine. Its has only 2 main ingredients: sardines and flour.

'Sardeles Tiganites Fileto' is the Greek expression for 'Fried Sardine Fillets'. You could say that it is, in some way, the Greek version of what the British call 'Fish & Chips'. I know that they normally use codfish but here we use sardines.

This dish is mainly served with lemon wedges and capers though another dish that suits this one very well is Skordalia. And off course, always nice and fresh, in the summer, a typical Greek Salad (Choriatiki Salata).

No matter how you serve this dish, 'warm' or 'cold', or with whatever you accompany it with, there is only one thing that should never lack from the table: TSIPOURO!

Ingredients:

  • - 25 Fresh Sardines.
    - 300 gr. flour(for breading).
    - olive oil.
    - juice of 1 lemon.
    - 1 whole lemon.
    - salt.
    - (black) pepper.
    - 2 - 3 tablespoons of capers.

Preparation:

  • - (1) Cut the the heads from the sardines.
    - (2) Fillet the sardines (cut, in the middle, from head to tail, to end up with 2 similar halves).
    - (3) Take out the small fish bones (spline).
    - (4) Bread the sardines in the flour. (you could use a plastic bag: put the sardines and the flour in it and shake until all the sardines are nicely breaded).
    - (5) Heat up some olive oil in a frying pan to about 180° Celsius.
    - (6) Put the sardines in the frying pan.
    - (7) Bring on taste with salt and pepper.
    - (8) Fry the sardines until golden-brown. (about 12 minutes).

  • Finally:
    - Put the sardines clock-wise on a plate, and put the capers in the center.
