Sesame Chicken Green Bean Stir Fry
This is one of my favorite dinner recipes. It is quick and easy and everyone loves it.
For the sauce
1/3 cup soy sauce
1/3 cup water
2 garlic cloves minced
2 tbsps brown sugar
1 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp fresh grated ginger
1 tbsp sesame seeds
1 tsp red pepper flakes
1 tsp cornstarch
For the chicken
1/2 tbsp sesame oil
1-2 chicken breasts
1/2 tsp garlic powder
salt and pepper
For the veggies
1/2 tbsp sesame oil
2 carrots sliced
1/2 onion chopped
1 red bell pepper chopped
12 ozts green beans ends removed and cut in halves or thirds
Cashews for topping
-Mix together sauce ingredients and set aside. Note if you do not like spicy foods I would cut the pepper flakes back to a quarter or half a teaspoon
-Add 1/2 tbsp sesame oil to large plan and turn on over medium heat. Because I cook with cast iron I also add some butter to ensure my food does not stick.
-Once pan is warmed add chicken and season with garlic powder, salt, and pepper. Cook until done and remove and set aside.
-In same pan add 1/2 tbsp sesame oil. Add onions and carrots and cook 4 minutes. Than add green beans and bell peppers and cook 8 minutes.
-Add chicken back to pot.
-Turn heat to low and add in sauce. Cook for 4 minutes.
-While my sauce is thickening I put my cashews in another pan and lightly toast them. You can also do this by putting them in the oven.
-Serve over white rice. You could also serve over fried rice however I find that white rice is a better compliment to this dish.
