Looking for a light dinner. A chicken avocado salad is just what you need.
Chicken:
1 chicken breast sliced horizontally in half
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp chicken bullion
1 tbsp olive oil
-In a bowl mix together all seasonings and olive oil. This will be your marinade. Coat the chicken in the marinade and cook on the stove top over medium low meat until down. Internal temperature of chicken should be 165 degrees F.
Salad:
2 cups romaine lettuce
1 cup cherry tomoates halved
1 small onion chopped
1 avocado
1 tbsp olive oil
1 tbsp chopped cilantro
salt & pepper
parmesan shavings
Cut up lettuce, tomatoes, onion, avocado, and cilantro and toss together. Add olive oil and salt & pepper to taste and toss again.
Once your salad is ready and chicken is done cooking add the chicken to the salad and grate fresh parmesan over top. My favorite is also adding balsamic vinaigrette dressing. Not a big chicken person no problem, this salad also tastes amazing with steak.
This dinner is not very high in calories and satisfies all nutritional needs! Thanks for this recipe!
