Carbonara
Carbonara pasta is a great quick and easy recipe that the whole family loves. You can make it with or without chicken and it tastes amazing.
fettuccine pasta
8 slices bacon
2 minced garlic cloves
2 chicken breasts
4 eggs
1 cup parmesan
-Cook pasta according to package. Do not drain as you will want some of the water for the base of your pasta.
-Cook the bacon in a skillet until it's nice and crispy so you can break it apart. About 3/4 of the way done cooking it add the garlic in and cook the garlic with it.
-Remove the bacon and garlic and put into a bowl for later. If you use a cast iron pan you should be fine but if you use a non stick pan and have a lot of great from the bacon you will want to dump some of the grease out.
-Cut the chicken into slices and cook until done. Season with salt and pepper.
-Reduce skillet heat to low and add the bacon and garlic back in. Add the desired amount of pasta in and toss until combined.
-In a small bowl beat together the eggs and parmesan. Add to the skillet tossing to combine. Be careful to toss right away or the eggs will start frying to the bottom of the pan right away.
-Add about 3 tbsps of the pasta water to make the sauce creamy.
