I got this recipe from a friend who, among other things, has a lot of perfect recipes. Technically these are mini princess donuts with cheese and disappear in an instant. You can dare and fill them with tuna. But even so, they are eaten in an instant.
Ingredients for 4 people:
80 g white or wheat flour
80 g butter / butter
3 eggs,
40 g cheese
200 ml of water
to taste salt + seasoning if desired
Preparation
1.
In a pan or bowl, dissolve 80 grams of butter in 200 ml of water and a pinch of salt. Melt the butter over medium heat, stirring gently, until it mixes well with the water into a uniform mixture.
2.
Then add the flour with constant rapid mixing to be able to combine all the flour into a moist dough as soon as possible. When you get the dough, mix it for another 2-3 minutes in a pan over medium heat to lose as much liquid as possible and be ready to absorb eggs and cheese.
3.
Transfer the dough to another cold bowl, add three whole eggs and whisk them into the dough with strong and quick movements. When you get a uniform smooth mixture, add 40 grams of finely grated cheese and whisk it in the same way into the cream.
4.
I used gouda, but you are free to put the cheese to your liking.
5.
The amount of cheese can also be increased but be careful not to add too much as then the dough will have trouble rising and instead of round puffs you will get flattened pancakes.
6.
When adding cheese, feel free to add some other spices such as chilli or garlic in granules to make your snack have a special taste.
7.
It is important to constantly mix the cream and make air bubbles in it by mixing it quickly. They will ensure that the dough swells later during baking. If you can't mix by hand, feel free to use a mixer for the same or even better effect
8.
When the cream is ready, use the cake decorating set and use the decorating bag and a simple attachment to press the balls of the obtained cream onto the baking paper. Be sure to leave enough space between them so that they do not come together when rising and baking in the oven.
