600 g wild salmon fillet in one piece
2 tablespoons lime juice
1 teaspoon grated lime zest
1/4 teaspoon ground pepper
1 tablespoon honey
2 cloves mashed garlic
half a teaspoon of salt
1/4 teaspoon coarsely ground pepper
1/2 teaspoon ground cumin
1/2 teaspoon hot smoked ground pepper
chopped primrose or coriander
30 g of cold butter cut into 2 cubes

Turn on the oven at 185 ° C and place the wire in the middle of the oven and let it heat up.
While the oven is heating, prepare the coating.

In a small saucepan, put mashed garlic, crushed paprika, lime juice, coarsely ground pepper and honey and heat on a low temperature and cook everything together until you get a thick liquid for 1 tablespoon.
Add 1 cube of cold butter and remove from the heat and slowly turn the pan to melt the butter, return to the hob for a few seconds and add another cube of butter, remove from the heat and turn the pan to melt the butter.
When all the butter is melted, remove from the heat.

Wash the fish and dry with kitchen paper.
You can bake it in one piece, I cut it into 3 pieces.
Put the fish on aluminum foil big enough that you can tuck the whole piece in so that the marinade doesn't leak anywhere.
Coat the whole fish with the marinade with a spoon or brush, sprinkle with cumin, grated lime zest and hot smoked paprika and close the aluminum foil all around to make a pocket of aluminum foil.

Bake the fish for about 12 to 14 minutes, open the aluminum foil and turn on the top heater and let it bake under the heater for two to three minutes, but be careful not to burn it, it just needs to brown a little.
The length of roasting salmon depends a lot on the thickness of the fish, but be careful, this type of fish must not be overcooked, because then it will be dry and without much taste.
In my picture above you can see that the fish is baked exactly as it should be baked.
Remove from the oven, sprinkle with chopped parsley or coriander and serve immediately with what you like to serve.
I like to serve it with boiled rice or potatoes.
