Ingredients

For  6 people, time: 60 min

  1. We clean the chokeberry from the stalks. Let's put it on a bigger tray.

    So leave it on the tray for 3 days to dry slightly. It should start to wrinkle. When 3 days have passed, we take chokeberry and put it in 3 jars, two large and one smaller. Take honey and pour half into large jars.

    Stir well and then add the chokeberry from a small jar and mix again. Let's close the jars.

Aronia Melanocarpa is a berry fruit, mostly resembling blueberries and was named Siberian blueberry for two reasons. The first is that she came to Siberia from North America, where she lives, and the second because she is resistant to very low temperatures. Siberian chokeberry tolerates cold winters and frosts down to -45 ° C. It also grows in the shape of a bush and if there is enough space it can reach a height of about 2 meters. The edible and medicinal part of the plant is a fruit that has a slightly more pungent taste than blueberries. It is also interesting that the fruits of chokeberry are well maintained on the bush so that they can be picked two months after ripening.

    The North American Indians used chokeberry for their diet by drying or grinding the fruit and combining it with meat and as an addition to cakes. Fresh fruits were most often used as a remedy for stomach ailments and chokeberry leaf tea to see wounds.

    Until almost little known, today the Siberian blueberry can be obtained in our country, it is easily grown and due to its exceptional healing powers, it is increasingly said that chokeberry is the plant of the future. Aronia has no natural enemies, so it should not be sprayed, which is why it is a healthy food.

    Aronia in its fruits contains a high concentration of antioxidants (tannins, biophenols, flavonoids, anthocyanins, catechins), to the extent that it is even a much more powerful antioxidant than cranberries. Therefore, it is a useful prevention against malignant diseases, it effectively cleanses the body of harmful substances and even heavy metals. Of the vitamins it contains C, A, E, B2, B6, B9 and a very rare vitamin P. Of the minerals there are calcium, potassium, iron, molybdenum, manganese, phosphorus and iodine. In addition, chokeberry contains the rare fruit sugar sorbitol.

    The healing properties of chokeberry are difficult to list without omitting some of them, but we will list the most famous: stimulates circulation, purifies the blood, relieves headaches and migraines, lowers high blood pressure, has a beneficial effect on the stomach and intestines, stops diarrhea, improves immunity, prevents development of viral and bacterial infections.

    Its beneficial effect on the bile and liver is especially emphasized because it purifies and enables more proper work of these organs.

    It is also important to say that chokeberry regulates the proper functioning and secretion of thyroid hormones, as well as regulates the work of the pancreas and can be useful in the treatment of diabetes (diabetes).

    The oxygen radical absorbance capacity (abbreviated ORAC in translation antioxidant capacity) is a unit for measuring the value of antioxidants in food. Following research conducted in the United States, it has been reported that 100 grams of ripe chokeberry fruit contains 16,100 ORAC units, while the optimal daily dose is known to be 3,000 to 5,000 ORAC units, needed for adequate antioxidant protection of human tissue and plasma. Thanks to this, it not only prevents the occurrence of cancer but also helps in the treatment of malignant diseases by destroying cancer cells.

    Aronia also promotes wound healing, slows down the aging of the body and skin, prevents wrinkles, protects against UV radiation.

    Finally, let's say that chokeberry is most often used in dried form or as a juice, so if you have one empty space in the garden, it is not bad to plant this plant. In addition to its healing powers, Siberian chokeberry looks just as beautiful in spring as it blooms as in July when it is decorated with fruits that will wait patiently until September. So chokeberry is both food and medicine.
