Lengua Estofada (Ox Tongue Stew with Mushrooms and Olives)
This dish is quite unique and I want to share it with you guys. My mother cooks it sometimes and it is really yummy.
Ingredients
- On tongue (tenderized, skin peeled, sliced)
- Tomato sauce
- Potato
- Garlic (minced)
- Onions (sliced)
- Green olives
- Mushrooms
- Scallions (chopped)
- Oyster sauce
Procedures
- Start by sauteing the garlic and onions
- Add the ox tongue
- Stir until the ox tongue are done
- Add the tomato sauce then stir
- Add water then simmer for at least an hour for the ox tongue to be fully cooked
- While simmering the ox tongue, Fry the potatoes, then set aside
- Saute the mushroom, then add the oyster sauce
- When the ox tongue became tender, out some pepper and salt
- Then add olives
Serve the ox tongue stew with the fried potatoes and mushrooms. Enjoy!
