Espasol 'Espasol' is a type of rice cake that is made of rice flour cooked in coconut milk. This cylindrically shaped treat originated from Laguna. It is made from rice flour cooked in coconut milk and sweetened coconut strips and, afterwards, dusted with toasted rice flour. To say, that this is a favorite of mien is an understatement. I ate the whole box in two sittings. I would have finished everything in one sitting if not for the tasks that I need to do. In addition to being a homemade treat, it is also popular vendor food in the Philippines. In addition to flour, coconut milk, sugar, and grated coconut are also included.
