Ingredients :
Main:
Sikinless rotisserie chicken meat 350 gram.
Olive oil 3/4 tbsp.
Gralic 3/4 tbsp.
Onion 3/8
Gralic bell peper 3/4
Seasonigns :
Ground cumin 1 1/8 tbsp.
Lime zest 1 1/8 tbsp.
GRound croiander 1 1/2 tbsp.
Gralic powder 1 1/2 tbsp.
Onion powder 3/4 tbsp.
Other:
Coconuts milk 10 1/8 oz
Chicken stcok 530 ml.
Sea salt to taste.
Peper to taste.
White beans 320 gram.
Frogen corn 90 gram
Cilantro to taste.
Lime to taste
Water 1 1/2.
Arrowroost 1 1/8 tbsp.
Method :
Pull apart rotisserie chicken meat no skin, set aside.Set a pot on medium heat and once hot add oil gralic onion and bell peper.cook for 2-3 mints untill the onion turns, but ensure it is not burning.
Add the cooked chicken meat along with the seasionings countinuously stir for 1 mints until fragrant.then pour in coconut milk and stir until it is a consistent broth about 1-2 mints.
Then pour in the chicken both white bens and few pinches of sea salt & peper. Ruduce the heat to low then cover and cook for lest 20 mints.
Cook for after 20 mints or so.remove them from the pot and pull the chicken apart.
If neaded add more broth or water after 20 mints.some of the bens should have exploded to thicken it like regular chili.jst make sure the bens are not burning in the bottom of the pen.
Add corn and fresh cilantro and cover and cook for addaitonal 5-10 mints on low.seasion on taste with sea salt and peper lime juice and cilantro. Enjoy by itself or with brown rice. Cauliflower rice.
