Ingredients :
Popcorn chicken :
Chicken breast 270 gram.
Egg 1 pic.
Almond flour 24 gram.
Cajun seasoning blend 0.4 tbsp.
Dried cheese 44 gram.
Gulten free panko breadcrumbs.
Dipping sauce:
Plain yogurt 91 gram.
Mustard 1.6 tbsp.
Organic raw honey 1.2 tbsp.
Lemon 0.2 to taste.
Sea salt to taste.
Peper to taste.
Method :
Honey musterd yogurt dipping sauce :
All ingredients to a bowl and mix thoroughly side aside.
Air-fried popcorn chicken :
Set a oven to gas 7
Crush the cheese using a heavy object like a skillet and place the crums into a bowl along with the panko.the crused chees should be about as fine as the panko.
Place the eggs in a separate bowl and lightly whisk.
Place the ingredients for the first coating and crispy coating in separate bowls and mix.
Dip chicken pieace in the first coating with the almond flour then in the eggs and then the crispy coating with the cheese. Place the coated chicken on the air fryer tray or basket. Repeat.
Air fry ( or bake) for 10-12 mins or untill the outside is goldern brown and the inside is complete cooked.
Enjoy with the honey mustard yogurt sauce or on top of a salad.
