Ingredients:

1/2 cup chopped walnuts

1 apple chopped

4 carrots spiralized or grated in food processor

1 tbsp apple cider vinegar

2 tbsp Olive oil

1/2 lemon juice

Salt and pepper to taste

2 eggs

Procedure:

  1. On small bowl, whisk olive oil, vinegar and lemon juice.

  2. Combine salad ingredients in a medium bowl. Pour dressing over salad. Slice eggs and place on top.
